The Senior Sous Chef role is an integral part of our team and this is a wonderful opportunity for the right person to be part of an exciting and unique dining experience. Our food and beverage amenities, each with a unique food concept and style are as follows: Auriens Restaurant including two Private Dining Rooms (80 covers) / The Speakeasy (Bar) / The Drawing Room and In-Apartment Dining.

The Senior Sous Chef will ensure the flawless service together with a multi-skilled team of food and beverage professionals.

The Senior Sous Chef works directly and actively support the role of the Head Chef in the smooth running of the kitchen ensuring that all areas of the kitchen are maintained to Auriens standards. To supervise and coordinate the kitchen service with other departments. Deal with staff queries, solving any problems concerning the kitchen or staff canteen. To coordinate and execute training of kitchen staff. To be able to motivate staff and cook any food on a daily basis according to business requirements.


This role reports to the Head Chef and will work closely with the Restaurant Manager, collaboratively they will bring to life our vision.


The ideal candidate will need to have a special talent and passion for delivering the highest of standards consistently in a personalised and genuine manner.  They should have good Food and Beverage knowledge and experience in the luxury arena. We are looking for someone that wants to take the time to get to know our Residents and wants to meet if not exceed their needs and wishes.  Someone who is enthusiastic, loves what they do and brings energy and fun to all the food and beverage experiences.

The successful candidate should have experience in a luxury kitchen operation, excellent interpersonal skills, be highly motivated and enthusiastic, and agile to adapt easily to changes.

  • Minimum 3 years leadership experience as Sous Chef
  • Previous experience in a 5-star establishment (preferred)
  • Experience in healthy food preparation and recipe costing an asset
  • Intermediate Food Hygiene certificate (preferred)
  • Strong understanding of HACCP (Hazard Analysis Critical Control Points) (preferred)
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists
  • Written and verbal proficiency in English
  • Good knowledge of Microsoft Office Suite
